The explanation above goes as follows:
The film is shot using both a regular film camera and a video camera. Here the Director is explaining the reason why he chose to use the film footage shot by the video camera as opposed to the regular camera in this scene and other scenes throughout the movie.

Does 'not scripted' mean it wasn't in the script or does it mean something like 'unforeseen'?

Explanation:
Voorafgaand aan de shoots is er het script, geschreven door de script writer. Het script wordt omgezet in dagelijkse shoot-plans. Dat plan wordt vaak weer omgezet in schetsen (tekeningen die cameraposities aangeven). Het weer kan een rol spelen. De realiteit van de props. Enz. Soms loopt er ook wel een "losse" camera mee. Die camera is "not scripted". De director geeft de cameraman instructies. Mijn ervaring: stafmedewerker in de opnames voor "A Bridge too Far" in ..... 1976!

Explanation:
Volgens mij betekent het beide dingen die je noemt: het was niet in het script, dus het was niet gepland en daarom onverwacht. Het is denk ik aan jou welk aspect je de nadruk wil geven. Zelf zou ik kiezen voor het niet geplande.
Dit is nog steeds die test, toch? Succes!

What about the scene where you get your chest waxed. Was that real?

SC: That was 100% real. We set up 5 cameras, because we knew there would be one take, there was no way of going back and trying to get it again. So we set a camera up by the guys, one over me, one specifically on my chest and one on the waxer. And it was not scripted. We just had an idea of where we wanted it to go. We hired a woman that was an actress/waxer, which in itself scared me because she wasn’t a professional waxer so that was all real. If you watch closely, there’s one close-up where you can see blood actually coming to the surface so that was no CGI. And when I pitched it to Judd, I said it should really be for real, because I thought to see them laughing at me in pain would probably be the funniest part of the scene. It was a fun day. It was a day I both dreaded and looked forward to equally.

And it was not scripted.
De woorden en bewegingen staan niet beschreven, toch hoeft dat niet ongepland te betekenen. Ongepland is niet wat er volgens mij staat, al zou dat wel een gevolg kunnen zijn. Niet gepland is volgens mij een stap te ver af van wat er staat, nl. not scripted
