So why would a quality-oriented outsourcer care about working fields as opposed to limiting themselves to commissioning translators only in their speciality fields?
Just two examples:

-> (Quality-oriented) outsourcer looks for a legal translation specialist that also works in mechanical engineering because engineers with excellent source language proficiency and good writing skills (i.e. real translators as opposed to engineers doing translations only on the side) that also have sound legal expertise are hard to find
# patent litigation translation: whereas in patent translation (i.e. patent applications and patent specifications), say, 'in the majority of cases' a quality-oriented outsourcer will prefer to invest in the fee of an engineer of the technical field concerned - gifted with very high proficiency in the source language and good writing skills - that oftentimes or at least at times does patents (with the latter being either a specialist field or a working field) as opposed to us specialist IP translators who have only "good" general technical understanding (even though we do do patents for agencies), in patent litigation translation you will want to make sure that all those countless highly specialized IP terms are correctly translated besides the technical descriptions of the invention, so that the specialist IP translator here is an at least equally interesting option for a quality-oriented outsourcer in relation to an engineer of the technical field concerned doing patents as he or she will oftentimes not be familiar with the IP terminology so the storyline of the court document or brief becomes difficult or sometimes even impossible to follow for the expert reader of the translation as neither the subject matter understanding nor the terms of art are there.
People might wonder, where is the indirect marketing effect of this post? Am I trying to say we are not a good choice for the patents we sometimes do? There is a secret beneath the surface, and that is the excellent research skills of a real IP translator, in particular knowing where to look for the information we need and where we can get that information with a high degree of accuracy. Just think of the patent claims. Also, there's our writing skills as experienced and degreed* linguists.
* The IoL's DipTrans is equivalent to a Master's as per that organization even though I would say it's really more like a BA, despite the very high complexity of the exams because translation technique training attended to obtain the degree is limited in scope and - voluntary. I, in turn, have a degree almost equivalent to a Master's.
