Thanks to a new agency, I am gaining some experience in new fields. Since registering with this agency and taking my first assignments from them, I have interpreted at a small group meeting (it was described as a corporate setting when I received the assignment information) and one child welfare services meeting.
I am revising my CV to include this information and I keep thinking I could mention this experience in a better manner. The current version reads "small group meetings ... The current version reads "small group meetings in various settings" in the "Highlights" section, and "(??) meetings" in the section devoted to details of my interpreting experience.
The people who receive my CV don't have all the time in the world, so I would prefer not to ramble on and on when describing my experience.

Your current CV has three points under "Highlights". The first point reads:
Three years of translating and interpreting experience, primarily in Law and Education. Additional experience in Medicine (worker’s compensation) and Sales/Computers.
I suggest you split that first item into two, and add the small-group thingy as the third point. How about this:
* Three years' experience translating and interpreting in Law and Education.
* Frequent translation in Medicine and Sales/Computers fields.
* Interpreting for small group meetings in various settings.
(and the other points added here)

A general rule for CVs is to use just one line per point, and never wrap around to a second line if you can avoid it.
As you say, Sara, your reader doesn't have too much time. Present them with a list under a heading and they make look at it; present them with a paragraph of text and they may give up.
Samuel's advice is good, but of course only you can decide what should be the titles and what order to put the details in. Another version would be:

Translating [in capitals and/or underlined and/or in bold]
* specialist in areas of law and education (3 years' experience)
* frequent translator of medical, sales and computing texts
Interpreting [formatted as above]
* small group meeting in corporate setting [perhaps add the subject area of the discussion]
* child welfare services meeting
However you choose to present it: make it short and snappy; use titles to take the eye estraight to the interesting bits; ensure you put all the most interesting info first.

-> stuff on dialects, being in the US, we pretty much assume you speak US english and Latin American Spanish (any countries in specific?)

-> Summarize please, most of the time how you got started does not interest anybody, although it might show a little personal touch here. You have experience in A, B and C, and will drive up to 200 miles from your home town/ anywhere in your state or something.
