這一個多星期同事請假,工作加倍繁忙,不過還是在上週六早上試了試 Pei Ling 找到的秘訣,也許我買的地瓜像拳頭一樣比較圓,冷凍過後用烤箱 200度烤了 50 分鐘才熟透。

像吃牛排一樣的,我把烤好的地瓜端放在盤上,用刀叉一小塊一小塊切下來,瓜肉柔軟均勻,皮薄容易入口,只可惜不僅沒有炭烤香,連地瓜味也挺淡的。

我想下回若還想烹食地瓜,大概會用電鍋蒸,時間短,熟食度更理想。至於烤地瓜,街頭巷尾都買得到,貴是貴了些,但那才夠香夠正統哩。

出得廳堂,入得廚房,上得學堂,下得論場。有誰敢令你心情唔好,PK大書要同你出氣, 有大叔在,無人能夠蝦(欺負)你,否則貝姨會怪我,影響到她游山玩水。無落咖哩粉,是落波羅,獻汁可能是鷹粟粉多了一點,有光澤, 但太THICK。心情唔好會影響煮野D味道。就唱番枝歌比你聽喇!

咕嚕肉原叫鬼佬肉,因為甜酸口味最得他們喜愛。咕嚕肉是我衰得最多又試得最多的菜,其他同樣艱難的菜色如獅子頭衰了以後只會到餐館吃;不過因為我口味鬼佬得很,希望能在家都吃到好吃的咕嚕肉,所以對它談得上是竭而不捨。多年烹調咕嚕肉的經驗告訴我,吉士粉及片糖缺一不可;如果你連吉士粉是什麼都不知道,那麼出街吃吧。肥肉切粒用鹽、糖、生抽、生粉、吉士粉醃好加入蛋液拌勻,沾上生粉及吉士粉落鑊炸至金黃盛起。青椒、洋蔥、菠蘿切粒略炒,倒入用茄汁、白醋、鹽、片糖調配成的糖醋汁煮至收汁,淋上肉塊上碟即成。我當然不能做到「金玉滿堂」裡羅家英的冰脆效果,不過如時間許可,在淋汁前先用大火重炸肉塊口感會較佳。
