快一年没有来这儿了,各位兄弟姐妹还好吧?都有财发了吧!抓钱的同时别忘了保重身体;这回子,偶抖出私房菜,推荐下扬州炒饭,供大家闲暇时做着尝尝。

食材准备:白米饭一碗(不要硬,也不能烂);鸡蛋两个(草鸡蛋为佳);菜籽油适量(约一调羹);小米葱3根(切成饭粒大小的段);火腿适量(切成饭粒大小碎丁);胡萝卜半条(切成饭粒大小);另外

食材准备:白米饭一碗(不要硬,也不能烂);鸡蛋两个(草鸡蛋为佳);菜籽油适量(约一调羹);小米葱3根(切成饭粒大小的段);火腿适量(切成饭粒大小碎丁);胡萝卜半条(切成饭粒大小);另外依据个人喜好,火腿和胡萝卜也可以不要;有条件的可以加些熟绿豆。

做法:
1、将菜籽油一勺倒入锅中,小火;

2、油起泡后将鸡蛋依次打入锅中,并用铲子迅速揉碎鸡蛋,将蛋黄蛋清与油混为一体,直到搅拌均匀;同时加白酒(去腥)及盐适量;

3、在鸡蛋尚未成熟时(一定不能等到鸡蛋熟),倒入米饭,迅速翻炒,将鸡蛋与米饭混为一体,中火;

4、翻炒一会后,加入胡萝卜丁、火腿丁,继续翻炒;

5、米饭基本不再粘连时,加入小米葱,继续翻炒

6、待小葱散发出香气变熟,且饭粒之间松散不粘连后,装盘即可;

注意点:

1、米饭加入后,要不停翻炒,否则会底部会烤焦,且食材之间接触不均匀;
2、待米饭之间基本不粘连即可装盘,如果继续翻炒,会导致水分丢失过度,而是米饭变硬;当然如果翻炒不到位,饭粒之间粘连一起也是很难吃的;

总而言之,凡事掌握火候,适度即可。
